I love pineapples. Do you know that pineapple is considered best for losing weight? Well, let me warn you having it in pudding form is not going to help you shed those extra pounds..but pineapple in any form is an excellent source of nutrients!!!
Here I made pudding using the readymade pineapple jelly packet that are available at supermarkets. This pudding is an inspiration from Asha's Pineapple Souffle.
Canned Pineapple: 10 rings
Canned Pineapple syrup: 1 cup
Sugar: 1/2 cup.
Chop the pineapple rings and boil it along with the sugar and the syrup till it is thick and cooked well.
Pour it onto a dish, spread it and keep it in the freezer while you make the custard.
Pineapple Jelly Packet: 1
Milk: 500 ml
Sugar: 4 tbsp
Egg yolks: 3
Whisk the egg yolks.
Whip egg whites till stiff. If you have a stand mixer, you can work it while you do the following steps.
Boil 250 ml milk with 4 tbsp sugar.
Take a ladle of the boiled milk and mix it properly with the whisked egg yolks.
Now pour the mixed milk and yolk to the boiling milk
Now add the ingredients of the pineapple jelly packet and stir till completely dissolved.
Turn off the stove and add 250 ml cold milk.
Fold in the egg whites.
Take the dish with the pineapple layer from the freezer and pour this custard over it.
Refrigerate for 4 hours.
Cut and serve as dessert.
