Beef Curry



My mom in law always cooks fresh beef (boil till cooked) and store it in the fridge. Although all foods stay safe if properly frozen, she does it so that it comes handy if some guests suddenly shows up for lunch (which is very common in India)
At my mom's house, beef is cooked only with the masala, but after marriage, I found that  if it is cooked and refrigerated, it will really help you on a rainy day.... you can be really innovative... can make curry, fry the beef with some masala, mince and make cutlets..or mince and make beef biriyani.....and ofcourse, beef stew for appam... whatever you want in very less time...

Beef: 1/2 kg
Pepper: 1 1/2 tsp
Turmeric powder: 1/2 tsp
Ginger garlic paste: 1 heaped tsp
Salt: as required

Mix everything, and cook it in a pressure cooker adding 1.5 cups of water. What I do is, wait for the first whistle and lower the flame and cook for 20 minutes (I don't count the number of whistles)
Once properly cooled, take the pieces out and refrigerate. Please don't throw away the stock, refrigerate that also.

Now to make the curry... Well, you can make it with any recipe..this is what I did yesterday and it went very well with rotis...

Mustard seeds: 1 tsp
Onions: 2 medium sliced
Ginger garlic paste: 1heaped tsp
Green chillies: 4 slit (adjust to your tolerance level)
Coriander powder: 3 heaped tsp
Chilly Powder: 1 tsp
Turmeric Powder: 1/4 tsp
Garam Masala: 1 tsp
Tomatoes: 2 medium roughly chopped
Salt: as required.

Heat oil in a kadai. Pop the mustard seeds and throw in the onions.
Saute till translucent and add the ginger garlic paste and green chillies.
When the onions turn slightly brown, add the masalas and a tbsp of the stock and saute for 2 minutes on low flame.
Now add the tomatoes and mix everything (no need to mash up the tomato)
Add the cooked beef and stock and let it boil properly.
Add more salt if needed.
Serve hot with rice or rotis.
