This is a great quick fix meal for a Sunday lunch after church. Also, it is a lunch box and kids friendly meal!!!!
Cooked Rice: 4 cups
Onion: 1 large diced
Ginger Garlic Paste: 2 tsp
Green Chilly: 2 slit
Salt: as required
Butter: 1 tbsp
Garam Masala: 1 tsp
Paneer Cubed: 1 cup
Green Peas: 1/2 cup
Carrot Cubed: 1/4 cup
(You can increase the quantity of green peas and carrot for a more colourful rice)
In a kadai, melt the butter and throw in the onions, green chilly and saute for a minute on low flame.
Now add the ginger garlic paste and again saute till the onions are wilted.
Mix in the green peas and carrot and let it get cooked on a low flame.
Add required salt, Garam Masala and mix everything properly.
Now add the cubed paneer, mix thoroughly without breaking the paneer.
Mix in the rice, add more salt if required and turn off the stove.
Serve hot with raitha and pickles.
Would love to have the entire bowl to myself... I love paneer and this is a delish one pot meal...
